Preparation steps

Trim and wash the mangetout. Shell the peas. Cook both in plenty of boiling, salted water for 1 to 2 minutes, until al dente. Drain, refresh in cold water and drain well. For the dressing, peel and chop the garlic and mix with the olive oil, sherry vinegar, sugar and a little salt and pepper. Mix the peas and mangetout with the dressing. Put the salad onto plates and add a little goat's cheese and Serrano ham to each. Sprinkle with pepper and serve garnished with parsley leaves.
