Ingredients

For the crêpes
200 milliliters milk
100 grams Pastry flour
1 pinch salt
2 eggs
2 Tbsps butter
For the filling
100 grams cream cheese
1 Tbsp Whipped cream
1 tsp Horseradish
freshly ground peppers
2 Tbsps chopped parsley
200 grams Smoked salmon

Preparation steps

1.

For the crêpes: Whisk together the milk, flour and salt until smooth. Gradually whisk in the eggs then set aside for 15 minutes. Melt 1/2 tablespoon butter in a crêpe pan, add 1/4 of the batter, tilt the pan to coat and cook the crêpes until golden brown on both sides. Repeat with the remaining butter and batter.

For the filling: Mix the cream cheese, cream and horseradish until smooth. Season with pepper and lemon juice, if desired. Mix in the parsley.

Spread the filling over the pancakes then top with the smoked salmon. Roll up and chill for around 30 minutes before serving.

Cut into small rolls and arrange on a serving platter.

Serve with other appetizers, as desired.
