- 1 medium Celeriac (about 400g)
- chilled water
- 1 egg yolk
- 1 tsp Dijon mustard
- ⅛ cup lemon juice
- 1 clove garlic cloves
- ⅔ cup olive oil
- ¼ cup extra virgin olive oil
- salt
- peppers
- 1 stick Celery (finely sliced)
Preparation steps

Put the celeriac into a bowl of chilled water and stir in 2 teaspoons of lemon juice. Set aside for 10 minutes, then drain well.

Place the egg yolk, mustard, remaining lemon juice and garlic into a food processor and blend until well combined.

Mix together the oils in a jug. With the motor of the food processor running, gradually add the oil to the yolk mixture in a thin, steady stream until well combined and thick and creamy. Season to taste with salt and pepper.

Arrange the celeriac and celery on serving plates and spoon the sauce on top. Garnish with celery and mint leaves and sprinkle with caraway seeds.
