Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line a baking tray with greaseproof paper.
Place the parsnips on the prepared baking tray, drizzle with oil, season with salt and ground black pepper and roast for around 40 min. Turn occasionally, then remove from the oven and serve in a bowl.
