- 21 ozs carrots (cut into batons)
- 2 Tbsps butter
- 2 Tbsps honey
- 2 Tbsps chopped parsley (plus extra for sprinkling)
- lemon juice

Preparation steps
1.
Cook the carrots in a pan of boiling salted water for 10–15 minutes, until nearly cooked, then drain.
2.
Return to the pan with the butter, honey and parsley, and cook over a medium heat, stirring now and again, for 10 minutes, until the carrots start to caramelize. Stir in a little lemon juice.
3.
Put into a warmed serving dish and sprinkle with parsley.
