2 Tbsps mixed, chopped Fresh herbs (such as mint, basil, chervil)

Preparation steps

1.

Preheat the oven to 200°C (approximately 400°F).

Peel and trim the parsnips, then halve lengthwise. Place on a greased baking sheet. Season with salt and pepper, drizzle with alittle olive oil, and roast for 25 minutes in the oven.

Mix the crème fraîche with the chopped herbs and lemon juice, then season to taste with salt and pepper.

4.

Place the parsnips on a platter, garnish with the basil, and serve with the crème fraîche.
