2 organic Oranges
200 grams Blue cheese (such as Gorgonzola)
2 Tbsps Crème fraiche
peppers (freshly ground)
salt
4 Sandwich breads
200 grams Roast beef (thinly sliced)

Preparation steps

Preheat oven broiler.

Rinse the spinach and drain well. Rinse oranges and wipe dry. Strip off half of the peel of 1 orange with a zester. Cut peels off both oranges removing all of the white skin. Cut the oranges into thin slices. Mash about half of the blue cheese with the crème fraîche and stir in orange zest. Season with pepper and salt.

Split sandwich buns horizontally and toast under broiler until crispy, about 5 minutes, watching carefully. Remove from broiler and spread the roast beef on bottom bun halves. Top with the blue cheese mixture and the spinach leaves. Then add 3-4 slices of orange and crumble the remaining blue cheese over the orange slices. Sprinkle with freshly ground pepper and place the remaining bun halves on top.
