1 Tbsp red peppers (crushed)
1 tsp black peppercorns (crushed)
4 bay leaves
4 cloves garlic cloves (chopped)
2 Tbsps lemon zest
2 cups extra virgin olive oil
2 Tbsps lemon juice
6 medium Red onions (peeled and hollowed)
1 cup Chicken broth

Preparation steps

Cut goat cheese into 1/2-inch rounds and place in a medium bowl. Add prosciutto, crushed red pepper, peppercorns, bay leaves, garlic and lemon zest. Then cover with oil and lemon juice.

Refrigerate overnight or at least 8 hours.

Preheat oven to 450 degrees F. Place onions cored side up in a baking dish. Add broth to bottom of dish. Cover with foil. Bake 20 minutes until onions are just soft and remove from pan with slotted spoon. Set aside.

Preheat the broiler to high heat. Remove goat cheese from refrigerator. Strain the liquid (keeping the spices, prosciutto and garlic) and remove the bay leaves from the goat cheese. Mix the goat cheese well,

Stuff the hollowed onions with the cheese mixture and place on a shallow baking dish or sheet pan. Cook under the broiler for 3 minutes or until the tops are golden brown. Garnish with parsley, if desired and serve.
