250 grams Puff pastry dough (frozen)
vegetable oil (for the molds)
3 red onions
2 eggs
200 milliliters Whipped cream
2 Tbsps Crème fraiche
2 Tbsps freshly cut parsley
salt

6 slices Goat cheese (roll)
sectioned parsley (for garnish)

Preparation steps

Defrost the puff pastry.

Preheat the oven to 180°C (approximately 350°F). Grease the molds with oil.

Roll the dough thinly to 3-4 mm (approximately 1/8-1/4 inch) and cut out pieces slightly larger than the ramekins so there is an overhanging border. Peel the onions and cut into wedges. Stir the eggs and the heavy cream, creme fraiche and parsley and season with salt and pepper. Place the onions in the tarts. Put a slice of goat cheese on each and bake until golden brown for about 30 minutes in the oven.

Remove the tarts from the ramekins and serve sprinkled with parsley.
