4 Tomatoes
1 Eggplant
1 Zucchini
1 Tbsp chopped Fresh herbs (such as parsley, thyme, basil)

Preparation steps

Peel onions and garlic and chop finely. Heat oil and saute onions and garlic until soft. Rinse and halve bell peppers, remove seeds and ribs and cut into strips. Blanch tomatoes in hot water, rinse with cold water, peel, halve, remove seeds and stems, chop roughly. Add peppers and tomatoes to onions and saute for 10 minutes. Rinse and dry eggplant and zucchini, trim ends and cut into slices. Add to the stew and season with salt and pepper. Saute for 10 more minutes.

Sprinkle with herbs and serve.
