16 ozs fresh ginger (peeled and sliced)
2 Tbsps Sea salt
2 cups Rice vinegar
cup caster sugar

Preparation steps

1.
Sprinkle the sliced ginger with the sea salt and gently mix together. Set aside for 30 minutes then pack the ginger into two 450g/1 lb clean jars.

Gently heat the rice vinegar with the sugar in a small pan until the sugar has dissolved then bring to a boil and pour over the ginger. Add a little more vinegar to cover the ginger if necessary.
3.
Leave for at lest one week before using.
