53 ozs cooking or hard Pear (peeled, cored and quartered)
slightly salted, cold water
lemon juice
2 ½ cups white distilled vinegar
2 cups sugar
½ lemon (finely pared rind)
1 tsp ground mixed spice
½ tsp grated Nutmeg
4 Cinnamon stick (broken)
4 cloves

1 Egg piercer, 1 Pot mit Deckel, 1 Small pot, 1 Small knife, 1 Cutting board, 1 Teaspoon, 1 Tablespoon, 1 Sieve, 1 Small skillet, 1 Plate, 1 Bowl, 1 Whisk, 1 Garlic press, 1 Small bowl, 1 Wooden spoon

Preparation steps

1.
Put the pears into a bowl of slightly salted water with a dash of lemon juice, to prevent them becoming brown.
2.
Mix a little of the vinegar with the ground spices and put the remaining vinegar and the sugar into a pan with the lemon rind.
3.
Heat gently until the sugar has dissolved completely, then add the spice mixture and 2 cinnamon sticks and bring to a boil.
4.
Rinse the pears and add to the pan.
5.
Simmer gently for about 15- 20 minutes, until the pears look clear and are tender, but not broken.
6.
Remove the pears using a slotted spoon and put into warm sterilised jars with the remaining cinnamon sticks and cloves.
7.
Discard the lemon peel and cinnamon sticks. Boil the liquid in the pan rapidly for about 10-15 minutes until it has thickened to a syrup.
8.
Pour over the pears to cover them completely and seal the jars immediately.
