100 grams Porcini mushroom (or chanterelles or other mushrooms)
½ l White vinegar
250 milliliters water
2 cloves
1 tsp white peppercorns
1 bay leaf
2 tsps salt
6 small shallots (peeled)
2 garlic cloves (peeled)
8 Tbsps olive oil

Preparation steps

1.

Measure olive oil and set aside. Place remaining ingredients in a pot and bring to a boil and cook mushrooms.

Remove pan from heat.With a slotted spoon or skimmer, remove mushrooms from boiling liquid and let drain for about 10 minutes. Place mushrooms into clean glass jars and pour 4 tablespoons olive oil to cover mushrooms. Seal immediately and store in a cool, dry place. To preserve mushrooms for longer, you will need to use a pressure canner and process jars according to manufacturer's instructions, or visit http://nchfp.uga.edu/.
