- 6 eggs
- 2 ½ cups white wine vinegar
- 6 peppercorns
- 2 Cinnamon stick
- 1 Mace (whole blade)
- 1 tsp allspice
- 2 cloves
- 1 bay leaf
- 1 Red onion (sliced)
Preparation steps
1.
Boil the eggs for 10 minutes, then plunge into cold water.

Put the vinegar, spices and bay leaf into a pan and bring to a boil. Boil for 10 minutes, then remove the bay leaf, cinnamon stick and mace.
3.
Peel the eggs. Pack the eggs and onions loosely in a warm sterilised jar. Pour over the hot vinegar, cover and seal tightly.
