Preparation steps

Trim celery, rinse, cut into 4 cm (approximately 1 1/2-inch) long pieces and cook until al dente in boiling salted water, about 6-8 minutes. Remove from heat, drain and reserve about 200 ml (approximately 3/4 cup) of the cooking liquid. Peel and rinse potatoes and cook in boiling salted water for about 25 minutes. Cool and cut into slices.

Rinse apples, quarter and cut out cores. Cut into slices. Add celery, potatoes and apples to a greased baking dish.

Combine reserved cooking water with creme fraiche, stir well and season with salt and cayenne pepper. Pour over the casserole. Cut mozzarella into slices and distribute on top. Bake in a preheated oven (200°C/approximately 400°F) until golden brown, about 20 minutes.
