1 kilogram potatoes (Predominantly waxy)
salt
1 bunch Celery
100 grams Blue cheese
50 grams Mascarpone
4 slices cooked ham
freshly ground pepper
milk
1 egg yolk

Preparation steps

1.

Scrub potatoes and cook for 20-25 minutes in salted water. Drain well, peel and cool.

Rinse celery and chop finely. Whisk blue cheese with mascarpone. Season ham slices with pepper and roll up, slice the rolls thinly. Add milk to the blue cheese cream and fold in egg yolk, season with pepper.

Cut potatoes into slices. Layer potatoes, celery and ham rolls in a greased baking dish. Pour sauce over and bake in preheated oven at 220°C (approximately 425°F) (gas mark 4, fan: 190-200°C) for about 15-20 minutes. Remove from the oven and serve.
