- ¼ tsp ground Cumin
- ¼ tsp ground cilantro
- 1 Tbsp Avocado oil
- 4 small, skinless Chicken breasts
- 3 cups English garden green pea
- 2 cups baby Spinach (washed)
- 2 Tbsps lemon juice
- Dill (chopped)
- salt
- freshly ground Black pepper
Preparation steps

Preheat the grill to hot. Mix together the spices, oil, and some seasoning into a paste. Rub onto the chicken breasts and arrange on a grilling tray.

Grill for 14 - 18 minutes, turning occasionally, until golden and cooked through. Remove from the grill when ready and leave to rest, covered loosely with foil.

Blanch the petit pois in a large saucepan of salted, boiling water for 2 minutes. Drain and toss with the spinach, lemon juice, and seasoning to taste.
4.
Spoon onto plates and top with the chicken and dill before serving.
