- salt
- 1 shallot
- 1 Tbsp butter
- freshly ground peppers
- Nutmeg (freshly grated)
- 100 milliliters Whipped cream
- 60 grams Gruyere
- 50 grams Crème fraiche
- 8 Oyster
- Sea salt (for baking)

Preparation steps
1.
Rinse spinach, trim and blanch in a pot of boiling salted water for about 2 minutes. Drain, rinse with cold water and squeeze excess liquid. Then finely chop. Peel shallot and finely chop. Heat butter in a pan, sauté shallot until soft, add spinach, mix and season with salt, pepper and nutmeg. Remove from heat.

Preheat the oven broiler.

Heat cream in a pot, add gruyère and slightly melt while stirring. Add creme fraiche and stir.

Open oysters and place in a pan sprinkled with sea salt. Cover each oyster with approximately 1 tablespoon spinach and cover with cream-cheese mixture. Bake under the preheated oven broiler, watching carefully, for about 5 minutes.
5.
Serve immediately. If desired, serve garnished with lemon wedges.
