Oat and Pine-Nut Granola
with Dried Cherries

Coarsley chop the pine nuts or almonds. Stir together the nuts with the oats, cinnamon and salt in a bowl.
Combine the honey, maple syrup and oil in a pot and bring to a boil, stirring frequently.
Slowly pour honey mixture over the oat mixture, stirring to combine.
Line a baking sheet with parchment paper. Spread the oat mixture evenly on the sheet.
Bake in preheated oven at 125°C (fan: 110 °C, gas mark 1-2) (approximately 225°F) until golden brown, about 1 1/4 hours , turning gently 2 or 3 times.
Remove from the oven and allow to cool completely. Mix the granola with dried cherries. Store in an airtight container for up to 3 weeks.
