- 1 Tbsp lemon juice
- 1 cup Spelt flour
- 1 cup plain flour
- 2 tsps Baking powder
- ½ tsp cinnamon (ground)
- ½ tsp salt
- 1 ⅛ cups butter (softened)
- 1 ¼ cups brown sugar
- 1 tsp vanilla extract
- 4 eggs
- 1 cup Almond flour
- 3 cups rolled oats
- 1 cup Pecan (coarsely chopped)
- ⅓ cup raisins
- 1 cup milk

Preparation steps

Preheat the oven to 190C (170C fan) 375F, gas 5. Line a baking tin with non-stick baking paper.

Peel and quarter the apples. Remove the core and dice. In a mixing bowl combine the apples and the lemon juice.

Sift together the spelt, plain flour, baking powder, cinnamon and salt.

In a mixing bowl, beat the softened butter with the brown sugar and vanilla until fluffy. Mix in the eggs one at a time. Mix in the flour mixture, almonds, oats, half of the chopped pecans, raisins and apples. Add just enough milk to form a batter that drops off the whisk in long ribbons when it is lifted.
5.
Pour the batter into the baking tin. Sprinkle the remaining chopped pecans on top. Bake in the centre of the oven for 35-40 minutes.
