Preparation steps

1.

Drain beets and collect 2-3 tablespoons of juice. Mix beet juice in a bowl with sour cream and sugar and season with lemon juice, cumin, salt and pepper.

2.

Rinse arugula and spinach, trim, spin dry and arrange on plates. Cut or crumble feta into cubes and sprinkle feta and beets over mixed greens. Drizzle with the dressing and serve garnished with chives.
