8 ripe Beefsteak tomato
1 Tbsp olive oil
1 peeled and finely chopped onion
2 cloves garlic cloves (finely chopped)
1 ⅔ cups Minced Beef
1 Tbsp rosemary (finely chopped)
2 Tbsps Parmesan (grated)

Preparation steps

Using a teaspoon, hollow out the tomatoes, discarding the seeds. Sprinkle the insides with a little salt and leave to drain upside down for 30 minutes.

Meanwhile fry the onion and garlic in the oil until translucent. Add the beef and rosemary, turn up the heat and fry briskly, stirring, until the beef is cooked. Season. Stir in the Parmesan and leave to cool a little.

Preheat the oven to 200°C (180 fan) | 400°F | gas 6.

Fill the tomatoes with the beef mixture and place in a roasting tin. Drizzle with olive oil and bake in the oven for about 30 minutes or until the tomatoes are soft but retaining their shape. Serve hot or warm with salad.
