- 6 ½ cups cherry Tomatoes
- 3 parsley
- 3 Basil
- 2 cloves garlic cloves (crushed)
- ⅞ cup olive oil
- Sea salt
- freshly ground peppers

Preparation steps
1.
After removing the stalks from the tomatoes, plunge into boiling water for a few seconds. Drain and pass under the cold tap, and then peel when cool enough to handle.
2.
Wash, dry and remove basil and parsley leaves. Set aside a few basil leaves. Shred the rest with the parsley.
3.
Place tomatoes in a shallow bowl, add the garlic and sprinkle with shredded herbs. Season and add the olive oil.
4.
Leave to marinate for 4 hours in a cool place.
5.
Serve with slices of toasted farmhouse bread, rubbed with garlic.
