- 5 ⅓ cups waxy potatoes
- ⅔ cup Bacon (cut into wide strips)
- 5 Tbsps white wine vinegar
- 1 tsp hot Mustard
- 1 tsp honey
- 5 Tbsps olive oil
- 1 cup cherry Tomatoes (halved)
- 1 ½ cups Arugula (chopped)

Preparation steps
1.
Steam the potatoes for around 30 min until tender. Leave to cool and then cut into bite-sized pieces.
2.
Fry the bacon in a pan and pat dry with kitchen paper.
3.
To make the dressing, mix together the vinegar, mustard, honey, 1-2 tbsp water and the oil. Season with salt and ground black pepper.
4.
Mix all the ingredients with the dressing and serve in bowls.
