Sterilize the jars.
Rinse the tomatoes, and dry thoroughly. Pierce the tomatoes repeatedly with a wooden skewer. Rinse and dry the herbs, then remove the leaves. Blanch the chilis in boiling water, and dry. Peel the garlic. Divide the tomato, chili, herbs, and garlic into the sterilized jars. Fill with the oil, making sure that everything is completely covered, then seal tightly.
