2 ½ ozs Shredded coconut
1 organic lemon
0.3 gram ginger roots (2 tsp)
1 Tbsp Birch sugar (or xylitol)
1 tsp ground Turmeric
1 oz liquid Coconut oil
2 Tbsps ground almonds

1 Mini food processor or blender, 1 Grater, 1 Citrus juicer

Preparation steps

1.

Finely chop cashews in a blender or blitz chopper. Add 3 Tbsp grated coconut and finely chop everything together. Rinse the lemon under hot water, rub dry, grate the zest and squeeze out the juice. Peel the ginger and grate finely.

Add lemon juice and zest, ginger, xylitol, turmeric and coconut oil to the coconut-cashew mix and blend in a blender until smooth. Add almonds and mix in briefly.

3.

Form 16 balls from the mixture with moistened hands. Place remaining coconut flakes on a plate. Roll lemon powerballs with coconut in it all around, then place on a plate and let rest in the refrigerator for about 1 hour.
