8 Sardine (gutted and cleaned)
1 large Beefsteak tomato (sliced)
1 onion (finely sliced into rings)
¼ cup olive oil
Sage
salt
ground Black pepper

Preparation steps

1.
Place the sardines, tomatoes and onions in a slow cooker. Coat with the oil and season well.
2.
Cover and cook on a low setting for 4 hours.
3.
Remove after 4 hours and arrange side-by-side in a ceramic roasting tray.

Preheat the oven to 190°C (170°C fan) | 375F | gas 5.
5.
Arrange the slices of tomato and onion rings on top of the sardines and season a little more.
6.
Roast for 6-8 minutes until lightly coloured on top. Remove from the oven and let the sardines sit for 5 minutes before serving.
