Grilled Whole Fish
ready in 40 min.
- 1 unwaxed lemon (finely sliced)
- 2 cloves garlic cloves (sliced)
- 8 sprigs thyme
- 8 sprigs oregano
- 4 sprigs rosemary
- 4 trout (portion-sized and ready to cook)
- 4 rashers Canadian Lean bacon
- 2 Tbsps olive oil
Put the lemon, garlic and herbs in the stomach cavity of the fish. Wrap a rasher of bacon around each trout and tie in place with kitchen string.
Brush each fish with oil, season with sea salt and ground black pepper and place in a fish basket. Close the basket firmly and grill on the barbecue for approx. 15 minutes until golden brown, turning occasionally.
Before serving remove the string and, if desired, also the herbs and lemon slices. Serve with herb butter if desired.
