For the vegetable stew
1 bunch Soup vegetables (about 250 grams)
1 onion
2 Tbsps vegetable oil
150 milliliters white wine
850 milliliters Beef broth
4 Mettwurst
250 grams smoked Pork belly (in slices)
salt

parsley (for garnish)
For the dumplings
40 grams butter
1 egg
50 grams Semolina flour
salt
Nutmeg

Preparation steps

For the vegetable stew, rinse, trim and peel the greens of the soup vegetables. Half of the soup vegetables can be diced. Cut the rest of the soup vegetables into small cubes. Cut the leek and carrot into slices (you may also cut in flower shape).

Peel the onion and finely chop. Heat the oil in a large saucepan and saute the onion until soft. Add the diced soup vegetables and saute briefly. Pour in the white wine and broth. Simmer for about 20 minutes.

For the dumplings, stir the softened butter with the egg until creamy. Add the semolina flour, season with salt and nutmeg, and let stand for about 5 minutes. Make small dumplings from the mixture using two wet teaspoons. Drop the dumplings into boiling lightly salted water and cook for 15-20 minutes until done.

Strain the stew through a sieve into another saucepan, bring to a boil, and cook the vegetable cubes for about 10 minutes. Cut the mettwurst (smoked sausages) into slices and the pork belly into pieces. Add into the stew and cook for about 5 minutes before the end of cooking. Season with salt and pepper.

Pour the stew into preheated dishes or dish, put in the dumplings and garnish with parsley leaves.
