For the chicken
1 ½ Tbsps soy sauce
1 Tbsp olive oil
1 ½ Tbsps dark soy sauce
2 Tbsps honey
1 ½ Tbsps Lime juice
½ tsp salt
¼ tsp Black pepper
4 skinless, boneless Chicken breasts
For the mango salsa
2 Mangoes
½ small Red onion (diced)
1 Lime (juice)
¼ tsp salt
1 Tbsp chopped parsley
To garnish
flat-leaf parsley

Preparation steps

Mix together the soy sauce, oil, honey, lime juice, salt, and pepper in a shallow dish. Add the chicken and turn to coat on all sides. Cover and marinate for at least 1 hour, turning occasionally.

Heat the grill.

Remove the chicken breasts from the marinade and grill for about 4-5 minutes on each side, until the chicken is cooked through and there are no pink juices.

For the mango salsa: peel the mangos and remove the stones. Dice the flesh and mix with the remaining ingredients. Cover and leave to stand for 30 minutes.
5.
Place the chicken breasts on serving plates and spoon the mango salsa on the plates. Garnish with parsley and lime wedges.
