Spicy Chicken with Lime and Mint Add a chopped green chilli to the marinade for real heat.

Preparation steps

1.
Toss the chicken pieces with the turmeric, juice and zest, mint and oil and a little seasoning and refrigerate for 30 minutes - no longer or the lime juice will start to turn the chicken 'woolly'.
2.
Heat a pan and fry the chicken until golden and cooked through, 10-15 minutes.
3.
Sprinkle with a little more salt and serve with the lime wedges.
