- ½ tsp sweet paprika
- 1 chili pepper (chopped)
- 3 Tbsps honey
- 4 Tbsps Lime juice
- 4 Tbsps olive oil
- cayenne pepper
- 8 Chicken legs
- For the carrot salad
- 1 Orange (juiced)
- 1 Lime (juiced)
- 1 Tbsp honey
- 2 Tbsps Oil
- 3 carrots (cut finely lengthways)
- 3 Purple carrots (heritage variety, cut finely lengthways)
- 1 small onion (diced)
- Plus
- parsley (chopped)
- Lime wedge

Preparation steps
1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line a baking tray with grease-proof paper.

Mix together the paprika, chillies, honey, lime juice and oil and season with salt and ground black pepper and a pinch of cayenne pepper. Brush the chicken legs on all sides with the marinade, place them on the prepared baking tray and roast for about 30 minutes. After 10 minutes brush with a little more marinade.

To make the salad, mix together the orange juice, lime juice, honey and oil. Add the carrots and onion mix well.
4.
Sprinkle the chicken legs with parsley and serve on plates with the carrot salad. Serve garnished with lime wedges.
