- 400 grams Chicken breasts
- 2 garlic cloves
- 15 grams fresh ginger
- 4 Tbsps soy sauce
- 1 tsp Sambal oelek
- 1 bunch scallions
- 400 grams Bok Choy (or another variety of Asian or Chinese cabbage)
- 200 grams fresh Pineapple (peeled weight)
- 4 Tbsps Corn oil
- ½ tsp ground cilantro
- 125 milliliters Chicken broth (instant)
- ½ Lime (squeeze of juice)
- 2 Tbsps roasted slivered almonds
- salt

Preparation steps
1.
Cut chicken breasts into strips. Peel garlic. Peel ginger and finely chop. Mix soy sauce with ginger, pressed garlic and sambal oelek, mix the meat with the marinade, cover and refrigerate 1 hour to marinate.

Trim scallions, rinse and cut diagonally into rings. Set aside 2 tablespoons for garnish. Rinse, trim and cut bok choy into pieces. Cut pineapple flesh into cubes.

Heat oil in a large pan and brown the meat quickly. Add coriander, scallions, bok choy and pineapple and cook, stirring, 5 minutes. Add broth and lime juice and cook covered over medium heat for another 5 minutes. Season with salt.
4.
Top chicken with the remaining scallions and the sliced almonds and serve.
