2 Tbsps olive oil
½ cup onions (finely chopped)
3 large garlic cloves (minced)
4 cups water
¼ tsp Dried rosemary
kosher salt (to taste)
freshly ground Black pepper (to taste)
4 ½ cups canned chickpeas (rinsed and drained)
2 bay leaves
½ cup roasted Red pepper (chopped)
¼ cup fresh lemon juice
3 Tbsps flat-leaf parsley (roughly chopped)
shaved cashew cheese (for garnish, if desired)

Preparation steps

1.
Heat olive oil in a large pot. Add onions and cook until soft, about 10 minutes. Add garlic and cook 1 minute longer.

Add water, rosemary, salt, pepper, chickpeas, bay leaves and red peppers. Boil and let simmer for 20 minutes.
3.
Using a stick blender, blend the soup to your desired consistency. Add lemon juice, stir, and cool to room temperature. Garnish each serving with Cashew cheese, if desired and additional pepper.
