- ¼ cup sunflower oil
- 1 onion (finely chopped)
- 2 cloves garlic cloves (minced)
- 2 inches fresh ginger (peeled and minced)
- 2 tsps Cumin powder
- 2 tsps Coriander
- 2 tsps Garam Masala
- 1 tsp paprika
- caster sugar
- 4 cups canned chickpeas (drained)
- 1 cup canned Tomatoes
- 3 cups vegetable stock
- cilantro (torn)
- salt
- freshly ground peppers

Preparation steps
1.
Heat the oil in a large saucepan set over a medium heat until hot.
2.
Add the onion, garlic, ginger, and a pinch of salt. Fry for 5 minutes, stirring occasionally, until softened.
3.
Add the spices and sugar, stir well, and continue to cook for a further minute.
4.
Stir in the chickpeas, chopped tomatoes, and vegetable stock. Pour everything into a slow cooker and cover with a lid.
5.
Cook on a medium setting for 4 hours until the chickpeas are tender.
6.
Adjust the seasoning to taste and serve with a garnish of coriander on top.
