- 2 red peppers
- 4 Tbsps olive oil
- 1 tsp English mustard
- 1 pinch sugar
- 2 Tbsps Cider vinegar
- 8 cups baby Spinach
- 2 cups canned chickpeas (drained and rinsed)
- 1 Avocado (peeled, stone removed and chopped)
- 2 large Tomatoes (deseeded and chopped)
- 8 green Olives (pitted and chopped)
- 3 scallions (finely chopped)
- 2 Tbsps parsley (chopped)

Preparation steps
1.
Put the peppers under a hot grill and grill on all sides until the skin has blackened. Put in a large bowl, cover with plastic wrap and set aside.
2.
Mix the oil, mustard, sugar and vinegar and season with salt and pepper.
3.
When the peppers are cool enough to handle remove the skins and discard the seeds. Chop the flesh.
4.
Gently mix the peppers with the rest of the ingredients, toss with the dressing and serve.
