500 grams Strawberries
½ untreated lemon (juice)
1 egg
2 egg yolks
80 grams sugar
1 packet Vanilla sugar
300 milliliters Whipped cream

Preparation steps

1.

Rinse and hull the strawberries. Transfer to a food processor and puree with the lemon juice. Pass through a fine sieve.

Place the egg yolks, the whole egg, sugar and vanilla sugar in a heatproof bowl set over, not in, a pan of simmering water and beat until creamy. Remove from the heat and stir in half of the strawberry puree. In a separate bowl, beat the cream to stiff peaks and fold into the egg yolk mixture.

3.

Divide the remaining strawberry puree among heart-shaped ramekins (or others if you don't have heart-shaped) and gently spoon the yolk mixture over. Freeze at least 3 hours.
