600 grams baby potatoes

3 Tbsps clarified butter
1 Tbsp rosemary (chopped)

Preparation steps

1.

Peel potatoes, rinse, cut into thin slices and season with salt, pepper, rosemary and nutmeg.

Heat half of butter in a pan, add potatoes, mix and then cover with remaining butter in small pieces. Cook for about 5 minutes. Sear, reduce heat and cook another 30 minutes. Cook covered until potatoes are soft. Do not stir. To serve, turn pan upside down over a plate to release potatoes onto plate.
