Preparation steps

1.

Blanch tomatoes in a pot of boiling water for a few seconds, drain, peel, cut into quarters, core and cut into small cubes. Rinse dandelion, trim and spin dry.

Trim oyster mushrooms and cut into narrow strips. Peel garlic. Heat 2 tablespoons olive oil in a pan and fry mushrooms briefly. Press garlic clove into the pan and season with salt and pepper.

3.

Mix vinegar in a bowl with salt, pepper, mustard and sugar and gradually add oil as needed. Add diced tomatoes to a large bowl, mix with dandelions and oyster mushrooms.Add vinaigrette and mix well. Arrange salad on plates and serve.
