- 1 Vanilla bean
- 9 ounces Buttermilk quark
- 3 tablespoons Maple syrup
- 1 large Organic orange (or 2 small)
- 2 Eggs
- 1 cup Milk (low-fat)
- 1 pinch Salt
- 8 slices Whole-wheat toast
- 2 tablespoons Canola oil
Halve the vanilla bean lengthwise and scrape out the seeds with a sharp knife.
Combine the buttermilk quark with the maple syrup and vanilla seeds in a bowl and mix until smooth.
Rinse the orange in hot water and wipe dry. Finely grate the zest and stir into the quark mixture.
Use a sharp knife to carefully remove the bitter white pith from the orange. Cut between the membranes to remove whole segments and set aside segments in another bowl.
Whisk together the eggs, milk and salt in a shallow baking dish. Place bread slices in egg mixture and turn to coat both sides.
Heat 1/2 tablespoon oil in a large nonstick skillet. Place 2 slices of soaked bread in the skillet and cook until golden brown, 1-2 minutes on each side. Repeat with remaining bread. Serve warm with vanilla quark mixture and the orange segments.
