For the dough
250 grams Pastry flour
2 egg yolks
125 grams ground almonds
3 Tbsps Mango syrup
1 Tbsp lemon juice
50 grams fine sugar
1 Tbsp Nut oil

Preparation steps

For the dough, mix all ingredients and knead together. Wrap in foil and refrigerate for 1 hour. Preheat oven to 200°C (approximatey 400°F). Roll dough out thinly on a floured surface between baking paper. Whisk egg yolk with 2 tablespoons water.

Cut out circles from dough. Place a paper fortune in the center if desired, brush edges with beaten egg yolk and fold circle in half. Press edges down and seal. Fold ends towards each other, creating a fortune cookie shape. Place on a lined baking tray and bake for 12 minutes. Cool and serve.
