- For the soup
- 500 grams ripe Tomatoes
- 2 Tbsps butter
- ½ onion
- 1 Tbsp Pastry flour
- 2 Tbsps Tomato paste
- 250 milliliters Broth
- salt
- freshly ground peppers
- marjoram (as needed)
- 2 pinches sugar
- For the garnish
- 100 grams Sour cream
- fresh parsley (for serving)
Preparation steps
1.
Blanch tomatoes in boiling water. Peel tomato, cut out stem and chop.

Melt butter in a pan. Peel and finely chop onion and saute in butter. Add flour, tomato paste and tomato pieces to the pan. Mix well and bring to a boil. Simmer for approximately 10 minutes and add broth as required. Blend or puree the soup and season with salt, pepper and marjoram as desired.
3.
Serve in dishes, place a dollop of sour cream on top of each bowl of soup and sprinkle with parsley leaves.
