2 garlic cloves
600 grams ripe Tomatoes
3 Tbsps olive oil
½ can strained Tomatoes (200 g)
600 milliliters Vegetable broth
salt
½ tsp sugar
½ bunch Chives
100 milliliters Whipped cream (at least 30% Fettgehahlt)

Preparation steps

1.

Peel the onion and garlic, and coarsely chop. Rinse and quarter the tomatoes, then remove the seed and coarsely chop.

Heat the olive oil in a large saucepan, and sauté the onion and garlic, stirring constantly. Add the strained and fresh tomatoes and cook briefly. Pour in the vegetable broth. Season to taste with salt and sugar. Simmer over medium heat for 20 minutes, stirring occasionally. Puree the soup, and pass through a fine strainer.

Rinse and dry the chives, and thinly slice. Whip the cream. Divide the soup into preheated soup bowls, and garnish with a dollop of cream and the chives.
