600 grams Tomatoes
2 Tbsps grained Vegetable broth
1 shallot
1 Tbsp butter
Basil
salt
freshly ground peppers
200 grams Whipped cream

Preparation steps

1.

Blanch, peel and chop the tomatoes.

Peel and finely chop the shallots. Sweat in the hot butter until translucent. Add the tomatoes and saute. Add 1 liter (approximately 4.25 cups) water and broth. Cover and simmer for about 20 minutes. Puree and season with salt and pepper.

3.

Beat the cream until stiff. Stir 2/3 of the cream into the soup. Divide the soup into bowls and add a dollop of cream to the top. Serve garnished with basil leaves.
