- 2 ¼ cups all-purpose flour
- 2 ½ cups rolled oats
- 2 tsps Baking powder
- 0.333 cup Fructose
- 0.333 cup butter
- ¾ cup raisins
- 1 large egg (beaten)
- 1 tsp vanilla extract
- 1 ⅔ cups Shredded coconut

1 Skillet, 1 Bowl, 1 Small bowl, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Teaspoon, 1 Whisk, 1 Slotted spatula, 1 Salad spinner, 1 Plastic wrap, 1 Plate, 1 Citrus juicer
Preparation steps
1.
Heat the oven to 170°C (150° fan) 325°F gas 3. Line 2 baking trays with non-stick baking paper.

Mix together the flour, oats, baking powder and fructose in a mixing bowl.
3.
Rub in the butter until the mixture resembles breadcrumbs. Stir in the raisins.
4.
Add the egg and vanilla and mix to form a dough. If the dough is sticky, set it aside for 10-15 minutes to firm up.
5.
Roll pieces of the dough into walnut-sized balls and roll in coconut.
6.
Place apart on a the baking trays and flatten slightly with a fork.
7.
Bake for 20-25 minutes until golden brown.
