- 1 cup powdered sugar
- 1 tsp vanilla extract
- 2 ¾ cups all-purpose flour
- 1 pinch salt
- ½ cup chopped Nut (walnuts, almonds or hazelnuts)
- ½ cup raisins

Preparation steps
1.
Heat the oven to 190°C (170° fan) 375°F gas 5. Line 2 large baking trays with non-stick baking paper.
2.
Beat the butter and icing sugar in a mixing bowl until soft and creamy, then beat in the vanilla.
3.
Gradually beat in the flour and salt until the mixture begins to form a dough. Add the nuts and raisins and knead lightly until combined.
4.
Divide the dough into 30 pieces and roll each piece into a ball. Place well apart on the baking trays and press each ball lightly to flatten slightly.
5.
Bake for 10-15 minutes until light golden. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
