- 175 grams Pastry flour
- ½ tsp salt
- ½ tsp baking soda
- 125 grams softened butter
- 60 grams sugar
- 60 grams brown sugar
- 2 eggs
- 1 drop vanilla extract
- 50 grams shelled, unsalted Peanuts
- 50 grams Rum raisin

Preparation steps
1.
Preheat the oven to 180°C (approximately 350°F). Line a baking sheet with parchment paper.

Sift the flour, salt and baking soda into a large bowl. Beat the butter, vanilla, sugar and brown sugar until light and creamy. Add the eggs, one at a time, mixing well after each addition. Stir in the flour mixture and mix until smooth, then fold in the raisins and peanuts.
3.
Scoop with a small teaspoon onto the prepared baking sheet.

Bake for 12-14 minutes until golden brown around the edges, but still soft on the inside.
5.
Remove from the oven, cool slightly on the baking sheet, then transfer to a wire rack to cool completely.
