- 5 Tbsps Rum
- ⅔ cup raisins
- 1 ½ cups Shredded coconut
- 2 cups all-purpose flour
- 1 tsp Baking powder
- ⅓ cup softened butter
- ⅓ cup brown sugar
- 1 egg
- ⅜ cup cream

Preparation steps
1.
Heat the rum gently and soak the raisins and half the coconut in it.

Mix the flour with the baking powder. Cream the butter and sugar together until light and airy and gradually add the egg and cream. Sieve the flour mixture over the top, fold in and finally mix in the raisins, rum and coconut mixture. Leave the mixture to rest for 1 hour.

Meanwhile, heat the oven to 180°C (160°C in a fan oven), 375°F, gas 5 and line a baking tray with grease-proof paper.

Form the dough into small balls and roll in the remaining grated coconut. Place on the baking tray and bake in the oven for around 12 minutes.
5.
Remove from the oven, leave to cool and serve in paper cases.
