- Ingredients
- 600 grams Pork tenderloin
- 1 red and yellow Bell pepper
- 2 garlic cloves
- 1 Kaffir lime leaf (Asialaden)
- 150 milliliters Coconut milk (Unsweetened, canned)
- 2 Tbsps Lime juice
- ¼ tsp Turmeric (ground)
- ¼ tsp cilantro (ground)
- ¼ tsp Cumin (ground)
- salt
- cayenne pepper
- 16 length Wooden skewers
Preparation steps
1.
Cut the pork into cubes about 2 cm (approximately 3/4-inch). Rinse peppers, halve lengthwise, remove seeds and white ribsand cut into 2 cm (approximately 3/4-inch) pieces. Alternately thread peppers and meat on the wooden skewers. Peel garlic and chop finely.
2.
Rinse the kaffir lime leaves and cut into very thin strips. Transfer to a bowl and add the coconut milk, lime juice, turmeric, coriander and cumin. Place the pork skewers in a shallow dish large enough to hold them in a single layer and pour the coconut marinade over. Refrigerate 1 hour. Heat a grill to medium. Lift the skewers from the marinade and grill, turning them as they cook until the pork is cooked through, about 6 minutes.
