3 Tbsps olive oil
4 Chicken breasts
1 Red onion (chopped)
1 red pepper (chopped)
2 cloves garlic cloves (finely chopped)
1 cup canned Tomatoes (chopped)
1 Orange (juiced)
1 Tbsp soy sauce
1 Tbsp runny honey
¼ cup Peanuts
2 Tbsps Sesame seeds

Preparation steps

Preheat the oven to 190°C (170 fan) | 375°F | gas 5.

Heat the oil in a large oven-proof frying pan and sear the chicken breasts until golden brown all over. Remove from the pan and set aside.

Add the onions and peppers to the pan and fry for 5 minutes. Add the garlic and cook for 2 more minutes then add the tomatoes and orange juice. Bring to a simmer, then arrange the chicken on top and transfer the pan to the oven to cook for 15 minutes.

Mix the soy sauce with the honey and brush it over the chicken then sprinkle with sesame seeds.

Return the pan to the oven for 5 minutes or until the chicken is cooked through.
6.
Transfer the chicken to a warm plate and stir the peanuts into the sauce. Taste for seasoning and add salt and pepper as necessary. Divide the sauce between four warm plates and top with the chicken breasts.
